San Cristóbal Mexico: History, Views, Cuisine

After spending a month in the sweltering heat of Mérida, we were eager for a change of scenery and climate. We boarded a bus for the 18-hour journey to San Cristóbal de las Casas, nestled in the cool, refreshing mountains of Chiapas. The route was anything but direct; due to the risks of banditry along the road via Palenque, the bus companies opted for a longer, safer path. Despite the extended travel time, the breathtaking scenery, particularly as we ascended into the mountains surrounding San Cristóbal, made the journey worthwhile.

Upon arriving, we checked into our Airbnb, a charming apartment perched high atop a building, offering sweeping views of the town and the mountains beyond. The cooler weather was a welcome relief after Mérida’s oppressive heat, and we quickly settled into the rhythm of San Cristóbal’s laid-back atmosphere.

San Cristóbal de las Casas immediately captured our hearts. The town’s compact center made it easy to explore on foot, and we spent our days wandering its narrow, cobblestone streets, lined with colorful colonial buildings. One of our first stops was the local cathedral, the Cathedral of San Cristóbal Mártir. This stunning 16th-century structure is an iconic symbol of the city. Its façade, a blend of Baroque and Moorish influences, is a vibrant display of intricate carvings and vibrant colors. Inside, the cathedral houses numerous religious artifacts, offering a glimpse into the rich spiritual history of the region.

We also visited the nearby Convent of Santo Domingo, another historical gem. Founded in 1547 by Dominican friars, the convent played a significant role in the evangelization of the indigenous people of Chiapas. The building itself is a masterpiece of colonial architecture, with its ornate façade and peaceful courtyards. The attached museum showcases an impressive collection of indigenous textiles, providing insight into the local culture and traditions.

San Cristóbal is also known for its vibrant markets, which we explored with enthusiasm. The Mercado de Dulces y Artesanías was a sensory overload, with its stalls brimming with colorful textiles, handcrafted jewelry, and traditional sweets. We also frequented the larger Mercado Municipal, where the fresh produce was a feast for the eyes and palate. The abundance of local fruits, vegetables, and spices made cooking at home a delight.

Dining out in San Cristóbal was equally satisfying. The town’s culinary scene is surprisingly diverse, and we relished the opportunity to sample a variety of international cuisines. We enjoyed everything from authentic Vietnamese pho to flavorful Lebanese mezze, fragrant Indian curries, and rich French pastries. Of course, we also indulged in traditional Mexican dishes, savoring the regional flavors that Chiapas is known for.

Our time in San Cristóbal de las Casas was truly unforgettable. The town’s blend of natural beauty, cultural richness, and culinary delights made it a perfect retreat from the heat of Mérida. We left with fond memories and a promise to ourselves that we would return one day to further explore this enchanting corner of Mexico.
